Green Omelette for a healthy start to the day

Ingredients

  • 1 whole egg
  • 2 egg whites
  • 1/4 cup edamame (soy beans)
  • 1/4 cup chopped broccoli
  • 1/3 small grated zucchini
  • Handful spinach
  • half an avocado, mashed

Method

  1. Whisk up egg and egg whites.
  2. Grate zucchini and fry in 1 tbsp olive oil with spinach.
  3. Add the eggs.
  4. Steam edamame and broccoli. Add to the omelette.
  5. Serve with mashed avocado.

Makes 1 serve
